Clean Eating Rocky Road


This recipe is delicious and very easy to make. A clean, healthy and nutrient packed way to enjoy a little rocky road indulgence. I’ve adapted Nigella’s recipe  – it’s divine – and “cleaned” it up, the result is surprisingly good. The dark chocolate is very intense so you only need a little bit to satisfy a chocolate craving. It’s perfect an hour before a workout with a coffee for a super charged energy boost.

The puffed rice combined with the protein powder creates the biscuity crunch whilst the dried fruit adds the marshmallow squidge – I think goji or inca berries work best and not just because they sound a bit pretentious, they’re actually delicious combined with the dark chocolate.

Clean Eating | Rocky Road:

Ingredients:

1/2 cup of virgin coconut oil.

1/4 cup of raw honey, manuka honey or rice malt syrup.

300g of real dark chocolate broken into pieces (90% cocoa solids is best, don’t use less than 70%).

75g of wholegrain, puffed brown rice cereal (unsweetened).

8 scoops of natural whey protein powder.

1 to 2 cups of raisins/goji berries/inca berries or dried fruit of your choice.

Pinch of salt

Foil tray approx. 20cm x 30cm.

Optional:

Add some chopped nuts into the mix (pistachios work well).

Extra xylitol or honey to taste.

Method:

Add the coconut oil, honey and chocolate to a pan and mix and melt on a low-medium heat until smooth and glossy.

Place the puffed rice, protein powder, dried fruit and a pinch of salt in a mixing bowl and mix through.

Add the melted chocolate to the dry mixture, mix thoroughly ensuring there are no clumps of dry mixture.

Spoon the mixture into a foil tray, press and smooth down and place in the fridge for a few hours or overnight.

Cut up into bars.

Keep the rubble debris left over from cutting up, store and use as a topping for protein ice cream or greek yogurt.

Store in the fridge.
